One of the most reliable characteristics of pure coconut oil is its reaction to temperature. Because natural coconut oil is rich in healthy saturated fats, it has a high freezing point (around 24°C or 76°F).

* The Pure Sign: During cooler months or when placed in the refrigerator, 100% pure coconut oil will solidify completely, turning into a stark white, butter-like consistency.
* The Adulteration Red Flag: If the oil remains a liquid in the fridge or only partially solidifies (creating a patchy, separated look), it has likely been cut with cheaper, low-grade liquid oils.
